Whoever you talk to in the Michel family, you’ll hear the same thing. Loud and proud, everyone agrees: “Chablis isn’t Meursault!” Whether its uncle Jean-Loup, the son of Louis Michel, or his grandson Guillaume, they are very clear about where they stand.
The Domaine is truly the flag-bearer for wine that is fermented and matured without coming into contact with wood. And that’s how things have been for forty-five years, since one day back in 1969 when grandfather Louis realised that the purity of Chablis would be kept intact if it wasn’t touched by oak. He made his decision, and never looked back. Even in the 90s with the fashion for oaky wines, the Michel family held strong, faithful to their beliefs, always resisting the temptation to follow the crowd.
The only thing that mattered for those at this family-sized Domaine (25 hectares, of which 17 are Premier and Grand Crus) in the famous and historical village was staying true to what they knew was right.
Guillaume makes sure this balance is retained.
