Kelly’s Resort Hotel & Spa, Rosslare, Co. Wexford are always looking for ways to enhance the customer experience, and this year is no exception, with the addition of a new 60-seater garden restaurant, “The Sea Rooms”.
“We wanted to create an exceptional indoor/outdoor dining experience for our guests all year round. The concept is very much focused on the views of the Irish sea and our exquisite gardens while showcasing produces from our own Kelly’s Kitchen Gardens. The name is tribute to the Hotel’s origin, “The Tea Rooms”, opened by my great-grandfather William J. Kelly in 1895. – says Bill Kelly.
With the help of LUCA Architects, we have designed a modern, sculpture-like building which makes the most of the seaside, sunny location. The restaurant is a stand-alone two-storey building with a glass structure, sea views on the garden level, a sunken lower section opening onto an outdoor terrace, and a custom barbecue kitchen installed by Smokin’ Soul – ideal for the summer months!
Chris Fullam is one of the country’s rising culinary stars. Chris was nominated at the 2021 Food & Wine awards for “Young Chef of the Year” after working in some of Ireland’s top restaurants, including The Greenhouse, Forrest Avenue and The Cliff House Hotel. Now he takes the helm of our exciting new project, “The Sea Rooms”. Chris creates enticing seasonal menus using Ireland’s finest produce.
The menus reflect the restaurant’s location, with fresh ingredients beautifully executed by our talented chefs. The vegetables, salads and herbs grown in our own “Kelly’s Kitchen Gardens” are at the forefront of the menu concept. We are serving contemporary-style menus for lunch and dinner. Our stunning Tasting Dinner Menu offers 7-courses with a more modern style of cuisine, highlighting the fresh produce from our gardens and what Wexford has to offer in abundance. “With Chris and our experienced Front of House Manager Nicole, I think the Sea Rooms will thrive,” says Laura Kelly
